Save Up To £4.59 With This 5-Minute Sugar-Free Maple Syrup Recipe
Let’s face it—real maple syrup is ridiculously expensive.
Even the sugar-free versions aren’t much better, especially when you break down the cost. That’s why this recipe is a game-changer: it saves you £4.59 in comparison to its branded competitor as it only costs 40p per 425ml. Plus it only takes five minutes to whip up, talk about a win-win!
You’ve probably noticed by now, but this ingredient is in so many of my recipes—and for good reason. It’s not just about the taste (though it’s amazing!); it adds sweetness, binds ingredients, and bulks up recipes without extra calories. Versatile, affordable, and ridiculously easy to make, this syrup has earned a permanent spot in my fridge.
The Key Ingredients
Maple Flavouring: I get mine from Cupcake World (available on Amazon). A single bottle lasts months and costs a fraction of what you’d spend on pre-made syrups.
Pure Sucralose: Did you know most “granulated sweeteners” contain only 1% sucralose? The rest is fillers like maltodextrin, so you’re essentially paying for air. Instead, grab a 100g bag of pure sucralose for £7.99—it’s equivalent to 60kg of sugar, saving you over £100 in the long run.
Xanthan Gum: This can be found in supermarkets like Tesco's and Sainsbury's, and lasts forever as an ingredient. This is a zero calorie thickener, and will provide the syrup like consistency to this mixture.
Ingredients:
500g water
½ - 1 tsp maple flavouring
¼ tsp salt
0.1g sucralose (for baking) or 0.5g (for a drizzle sauce)
½ tsp xanthan gum
Optional but recommended:
1 tsp lemon juice (preserves freshness)
Method:
Bring 400g of water to a boil. Use your kettle or stovetop—whatever works best for you.
Add the remaining 100g of water to a blender or bowl along with all the other ingredients. Blend or whisk until smooth (no lumps allowed!).
Slowly add the boiled water, whisking gently (a fork works fine).
Let the syrup cool slightly, then refrigerate overnight to thicken and chill.
Pro Tip: Add lemon juice to help preserve your syrup. It’s especially useful if you’ll be using it for recipes over a few weeks.
Substitutions & Customizations:
Swap xanthan gum for cornstarch or tapioca starch, but keep in mind this will add calories. I've recently been experimenting with natural thickeners such as Arrowrot Powder and i've seen some success with these. but let me know how they work out for you!

Storage:
This syrup keeps for up to a month in the fridge and is freezer-friendly. Store in a sealed container and defrost in the microwave as needed.
