Okay, so you're here, which means you're a fan of brownies right? What if I was to tell you there was a way of honoring this craving in a way that wont leaving you feeling sick from too much sugar, and is basically just perfect and endlessly customisable so you'll never struggle to find a recipe to fix that chocolate craving again! Let's get into the recipe:

Ingredients
Wet Ingredients
200g Dark Chocolate (Melted)
200g Plain Soya Yogurt
100g Dark Sugar
40g Sugar-Free Maple Syrup
50g Peanut Butter
20g Lemon Juice
1 tbsp Mint Flavouring

Dry Ingredients
30g (MyProtein Vegan Vanilla) Protein Powder
70g Plain Flour
30g Cocoa Powder
1 tsp Bicarbonate of Soda
1 tsp Baking Powder
¼ tsp Salt
0.05g Pure Sucralose / 2 Dissolved Sweetener Tablets

Optional Protein Icing:

45g Icing Sugar
15g Protein Powder
40g Almond Milk (adjust for desired consistency)
¼ tsp Mint Flavouring
Food Colouring

Method
Preheat your oven to 180°C and line a baking tray with parchment paper.

Using the double-boiler method, melt the dark chocolate.

Stir in the soya yogurt, dark sugar, maple syrup, peanut butter, lemon juice, and mint flavouring until smooth and combined.

In a separate bowl, sift together the dry ingredients: protein powder, flour, cocoa powder, bicarbonate of soda, baking powder, salt, and sweetener.

Gradually fold the dry mixture into the wet ingredients until a thick batter forms.

Divide the batter into 12 equal portions (use a scale for precision) and shape into rough circles on the baking tray.

Bake for 18 minutes on the middle shelf. Allow the cookies too cool for 5 minutes before transferring them to a wire rack.

Once completely cooled, decorate with your chosen topping or drizzle on the optional protein icing.

Cost Breakdown
Make a batch for just £2.89—that’s only 24p per Brookie! Here’s how:

Dark Chocolate: Morrisons (55p), Sainsbury’s (70p), or Aldi chips (90p).
Soya Yogurt: Aldi, Lidl, and Asda sell 500g for under £1.10.
Dark Sugar: Home Bargains (85p for 500g).
Protein Powder: MyProtein often runs sales—bulk buy for year-round savings.

Storage Tips
Keep in an airtight container in the fridge for up to a week, or freeze for longer storage. These Brookies defrost quickly and taste amazing chilled, making them an easy grab-and-go snack. Wrap individually to help retain moisture and freshness.

"What will happen if I use a thinner protein powder mix?"
You'll end up with a fudgier brookie with a much smoother appearance. And although it may look less appetising as a result, I can promise you that it doesn't effect the flavours and it'll be just as delicious!

To make yourself a festive variation, you'll need to hold back on the mint flavouring and go for these instead:

1 1/2 tsp Ginger Powder
1/2 tsp Cinnamon Powder
1 tsp Orange Extract
1 tbsp Instant coffee
12 Gingerbread Oreos to top
Optional: Mix in 60g Chocolate Chips!
