Gingerbread Latte Spiced Sweet Potato Cake

This has to be my favorite recipe to so far! It's moist, fluffy, and packed with cozy gingerbread flavours. The entire cake costs less than £3 to make, and each slice is packed with over 8 grams of protein. So let's get into the recipe:

You'll need:
Wet Ingredients -

50mls Unsweetened Almond Drink
15mls Lemon Juice
1/2 tsp Vanilla Extract
1/2 tsp Orange Extract
1 tsp Instant Coffee
180g Plain Soya Yogurt
180g Sweet Potato Puree
(Around 240g Raw)
50g Peanut Butter
100g Brown Sugar
50g Caster Sugar

Dry Ingredients -
170g Plain Flour
30g Ski-MX PRO V-Gain Vanilla Vegan Protein Powder
1/2 tsp Bicarbonate of Soda
1 tsp Baking Powder
1/4 tsp Salt
1 1/2 tsp Ginger Powder
1/2 tsp Cinnamon Powder
Optional -
8 Gingerbread Oreos

How to Make It:
Prep the Buttermilk: Mix almond milk and lemon juice with vanilla and orange extracts. Let sit while you prepare the rest.

Blend the Wet Ingredients: Combine sweet potato puree, yogurt, and maple syrup in a blender until smooth. Add the buttermilk mixture, peanut butter, sugars, instant coffee, and any additional sweetener (e.g., 0.01g pure sucralose). Blend until fully combined.

Combine the Dry Ingredients: In a large bowl, sift the flour, protein powder, bicarbonate of soda, and baking powder. Stir in salt, ginger powder, and cinnamon.

Mix Wet and Dry: Gradually fold the wet mixture into the dry ingredients. Stir until just combined—don’t over-mix!

Bake: Pour batter into a lined 8" cake tin. For extra indulgence, top with Gingerbread Oreos. Bake in a preheated oven at 180°C for around 40 minutes.

Cool: Let the cake rest for 5 minutes in the tin before transferring to a cooling rack.

Storage Tips:

Refrigerate for up to a week.

Freeze for up to 1 month: wrap slices individually for easy grab-and-go snacks. Defrost in the microwave for 30 - 60 seconds.

Substitutions:

No almond milk? No worries—any plant milk you have on hand will do the trick! Oat, soy, or even coconut milk work just as well.

Not a peanut butter fan? While the peanut butter flavor in this cake is subtle, I totally get it if it’s not your thing. Swap it out for almond butter, any seed or nut butter, or even melted butter or a neutral oil. Just keep in mind, the texture might change a little, but it’ll still be delicious.

Out of brown sugar? If you have molasses, you can mix a little into white sugar to make your own brown sugar. No molasses? That’s fine—just use white sugar instead. Be warned, though—this will tone down the rich caramel notes, which are a big part of the cake’s flavour.

Protein powder tweaks can be tricky. If you’re using a thicker powder like the MyProtein vegan Vanilla blend, you’ll need to add a bit more liquid. Start by adding an extra 10–15ml of almond milk and adjust as needed. Using whey protein instead? That works too—just make sure the consistency feels right when you’re mixing everything together. It should be a similar consistency to banana bread.

Want to tweak the flavors? Go for it! If you love a stronger coffee note, feel free to add more espresso powder—but not too much, or you might end up with a bitter cake. Fancy a touch of maple or caramel? A splash of maple or caramel flavoring could elevate this cake even further!
